If you think kale chips are boring, dry, or only something you eat when you’re being “good,” these will change your mind.
These “Cheesy” Kale Chips are crunchy, savory, and deeply satisfying—thanks to a creamy walnut-based coating that bakes into a crave-worthy, umami-rich snack. They’re the kind of thing you make “just to try” and suddenly realize you’ve eaten the whole tray.
Perfect for movie nights, afternoon snacking, or when you want something salty and nourishing without reaching for a bag of chips.

Ingredients
Raw walnuts, soaked for a few hours
Bell pepper, chopped (optional)
Nutritional yeast
Maple syrup (adjust to taste)
Fresh lemon juice
Salt
Paprika
Cayenne
Fresh kale, washed, de-stemmed, and chopped
How to Make “Cheesy” Kale Chips
Preheat the oven to 200°F and line a baking sheet with parchment paper.
Drain and rinse the soaked walnuts, then add them to a food processor. Pulse a few times to break them down. Add the remaining ingredients—excluding the kale—and process until a thick, creamy mixture forms.
Place the kale in a large bowl and add the walnut mixture. Using your hands, massage the coating into the leaves for a few minutes, making sure each piece is well covered. This step helps soften the kale and ensures even flavor throughout.
Spread the coated kale leaves in a single layer on the prepared baking sheet. Bake until the chips are dry and lightly crisp, checking frequently to prevent burning. Once done, remove from the oven and allow them to cool slightly—they’ll crisp up even more as they rest.
These kale chips are savory, crunchy, and surprisingly filling—proof that plant-forward snacks can be both nourishing and indulgent.
