They’re soft, chewy, naturally sweetened, and incredibly easy to make. The kind of snack you keep in the freezer “just in case” and end up reaching for daily.
The best part? This recipe is flexible. Roll it into bite-sized balls, press it into bars, or slice it straight from the pan. However you shape it, it’s nourishing, comforting, and perfect for busy days.

Ingredients
Gluten-free oats
Coconut oil
Smooth nut butter of choice (almond, peanut, cashew, sunflower seed, etc.)
Maple syrup
Vanilla extract
Almond meal or almond flour
Fine grain sea salt
Mini vegan dark chocolate chips or chopped dark chocolate
How to Make No-Bake Nut Butter Cookie Dough Bites
Add the oats to a high-speed blender or food processor and blend until a fine flour forms.
In a large bowl, combine the coconut oil, nut butter, maple syrup, and vanilla extract. Whisk or mix until smooth and creamy. Add the almond flour, oat flour, and sea salt, mixing until a soft dough forms. Fold in the chocolate chips. A food processor can also be used for this step if preferred.
Scoop the dough and roll into small bites, press into bars, or spread into a parchment-lined pan—whatever works for you. If chocolate chips fall out while shaping, simply press them back in.
Transfer to the freezer and chill briefly until firm. Once set, store in a freezer-safe container for easy, grab-and-go snacks.

If the dough feels too dry, add a small splash of dairy-free milk until the desired texture is reached.
